Race surface is the surface that is on the wheels as original. Note that many manufacturers choose to wear this surface, in which case it is called Stoneground instead.
The race surface is a sticky and rubbery surface that is usually extremely grippy before it is worn away. New wheels are therefore usually very popular in downhill competitions where this surface gives you extremely good grip until it is worn away.
