Release point refers to the point at which your wheels release and start to slide. All wheels require different amounts of force to release depending on the material mix and the appearance of the wheel. Hardness and contact surface also have a big impact on the degree of grip on the surface. Other factors such as your technique and how the trucks are mounted on the board also affect when the wheel wants to release. As a beginner, it is usually easier to have a wheel with an early release point. But at the same time, you don't want a wheel that becomes slippery when it releases.
When the slide returns to full grip, it is called Hookup.
